Why is the unity version available on GOG and not on Steam?
I kind of prefer steam cause I own most of my pc games on it. The unity version obviously makes the game much less archaic and easier to play, so why is the original daggerfall is available on steam for free but the unity version isn't? The unity version I think is fan made and I know I probably could mod the steam version to play the unity one, but still I was curious.

Daggerfall Unity (DFU) is not available on GOG. GOG offers the Daggerfall GOG Cut which consists of Daggerfall + an older version of DFU + a number of DFU mods (not all with the approval of the mod authors - I think some of them have been withdrawn meanwhile).

OK for players who don't want the most recent DFU version and like the mod selection, all other players are better served by downloading DFU from the DFU site and the mods they like from The Nexus.

I did forget to mention that there are DFU mods available from non-Nexus sites. For more details read the DFU forum on the DFU site.

But can you really have both (or all three) without changing the run parameters every time you want to use a different version? The guide says "swapping out", which isn't "both" in my understanding.
Another (potential) issue are savegames. I call it "potential" because I haven't tried the configuration(s) proposed in the guide myself, as I run DFU directly, not via Steam, don't use the DF GOG Cut at all, and also don't use Steam cloud.
Do the configuration changes mentioned in the guide make sure that you always get the right savegames?

It's not a "unity version on GOG", it's classic Daggerfall + Daggerfall Unity (DFU) + a selection of about 30 DFU mods, selected by an individual or group following subjective (and intransparent) criteria and without bothering to ask the mod authors for approval (some of these mods were withdrawn from the package meanwhile). Moreover, the DFU version is outdated meanwhile, I'm not aware of any statement of GOG to update DFU and the mods of the package to the most recent DFU version (and DFU is still in development and updated regularly, too).
If you're happy with this, there is nothing wrong with the DF GOG Cut (but it's still not "The Unity Version of Daggerfall" - and not called such by GOG).

The easiest way, is if you are on linux. Just use luxtorpeda to automatically install it.

GoG had their hearts in the right place.
The problem is that the more you shove into a 'recommend' mod pack
without consistent update & upkeep,
the worst it's going to get later on as more and more stuff gets outdated.
