OK for players who don't want the most recent DFU version and like the mod selection, all other players are better served by downloading DFU from the DFU site and the mods they like from The Nexus.

Why not both?
But can you really have both (or all three) without changing the run parameters every time you want to use a different version? The guide says "swapping out", which isn't "both" in my understanding.
Another (potential) issue are savegames. I call it "potential" because I haven't tried the configuration(s) proposed in the guide myself, as I run DFU directly, not via Steam, don't use the DF GOG Cut at all, and also don't use Steam cloud.
Do the configuration changes mentioned in the guide make sure that you always get the right savegames?
If you're happy with this, there is nothing wrong with the DF GOG Cut (but it's still not "The Unity Version of Daggerfall" - and not called such by GOG).
The problem is that the more you shove into a 'recommend' mod pack
without consistent update & upkeep,
the worst it's going to get later on as more and more stuff gets outdated.
