There will be a choice during the ending sequence where you choose what ending you want. If you want both, you can also look up how to make a copy of your save so you don't have to replay as much.

You're probably past it now but I backed up my save and did the normal ending first so I could learn the easier version of the boss, then loaded up my save and did the true ending and had a much better time only learning the last phase
