Pitching (pulling the nose up/pushing it down) has various functions.
Pulling up on loops/steep inclines prevents scraping your ship's nose which can slow you down/dmg your ship.
You can also pitch up at the right time to take flight and detach from the track (is explained in a later game tutorial).
Lastly, there are low barriers along the track that you can jump over to cut corners sometimes. Pitching up will prevent you from bonking these barriers and fly over.
Pitching down on descents helps conserve speed & can prevent you from accidentally detaching.
Here's some examples using an old video of mine.
0:46 - Pitching up to jump a low barrier.
1:13 to 1:20 - pitching up and down to stay parallel so I don't scrape nor accidentally come loose from the track.
1:52 pitching up over a crest while going fast enough to intentionally detach from the track and take a cut.

if i remeber correctly bad landings also damage your ship and end your turbo. another plus is when there are arrows on the landing spot you get a free boost when doing a good or perfect landing
