I don't know why Sega didn't at least going with the master system versions but it was very clear from the start it was going to be the basic game gear versions.
Also not every game had a Master System version - most didn't. Plus Sonic 2 and Chaos were EU exclusives, and Blast was for Brazil.
Yeah, the games appeared stretched in those collections, but you could fix it yourself if you wanted to by using your TV settings to display at a 4/3 resolution, a feature built-in to most TVs nowadays.
I don't see why offering the Master System versions of the games that did get released on it couldn't be an option you could select before launching the game. As for regional concerns, the games are region free and will run at 60hz if you play them on a US console.
What is lost judgement? I wouldn't mind being able to play fighters again. As far as I recall they haven't re-released fighters since gems collection and on the xbox 360.
Even the Game Gear games that released on the 3DS Virtual Console had this feature, a case of SEGA does what Nintendon't as they didn't provide screen size settings for their own games on their own system. They even provided some really cool looking Game Gear borders for when you're not playing in stretched full screen.
As part of the series' history of recreating whatever Japanese city a game takes place in, arcades are in there, so you can play a handful of Sega arcade games like VF5FS, Puyo Puyo and Fighting Vipers. Sonic the Fighters is among the selection of titles in Lost Judgement.
Additionally, protagonist Takayuki Yagami has a Master System in his office that he can play at any time, as well as pick up cartridges from shops and through other challenges. No Sonic game is among that list of Master System games.
