Treasure chests can get you the levels you need, aslong as you own the spinach. If you're leveling up far too quick, there'll be a massive delay after you walk over the chest, that's how you know. Eventually things will catch up.
I've tested this and you are correct. If you banished an item earlier, if you get it later (e.g. ribboned chest collection) then it won't be available in reward pop-ups and hence the auto coin / health will still continue.
