It's like the Demo Shields in TF2;
Where Splendid Screen is basically a better version of the Targe, and Tide Turner basically makes the boots+shield gameplay useless.
There's a horrible analogy. The shields in TF2 have distinctly different uses, but combinations make certain ones better than others.
Sammy is only usable on short runs as otherwise you end up in an unbreakable infinite loop.
Not that it matters at all - You don't need that kind of gold anymore. Thus Trouser's better by default, because you can get him without the DLC that makes gold completely useless.
If you have Sammy, you no longer need gold, so it's a completely moot point.
Trouser has additional greed scaling, while Sammy scales Wicked Season a lot faster and gets extra gold from his improved Vicious Hunger, But the problem with Sammy is that I can't prevent the game from turning into a slideshow when limit break level ups spam the eyeballs, and without limit break he can't keep up with the curse scaling.
Trouser doesn't scale curse as fast so enemies shouldn't become a problem, and you have complete freedom when it comes to weapons so you can avoid anything that gets too laggy.

Make sure you don't chose any assorts that increase curse or additional projectiles, those kind of stuff will gradually lag the game engine to a crawl.
Besides that, a no egg Sammie can get 10K eggs and 100M gold with a little setup in Abyss Foscari and then leaving it to AFK, I've never gotten numbers like that out of Trouser
I think you're talking about getting stuck in a level-up loop where it won't let you hit Escape to quit?
I've had that, and the fix that worked for me (in the current/"old" engine) was to click out of the Vampire Survivors window and wait a few seconds. When the game doesn't have focus and has loads of stuff going on, it responds by gradually slowing in-game time down a lot. It has quite a few benefits, including eliminating slow-down from too much happening on-screen, and letting stacked level-ups catch up. Then you can click back in and, before the speed ramps back up, bring up the menu and quit.
With a better planned build I could get sammy to make 4m every 30 minutes. Then after the build was complete and I let it run I had 1b at minute 40 and 2b at minute 50. Pretty insane. Now that I think about it this is hyper mode as well so half that time.
