Adventures are a "soft reset" that focuses on being a short streamlined experience. They can be unlocked by obtaining the Atlas Gate Relic from the Boss Rash stage.
While I appreciate the concept of creating a sort of fresh start, you will quickly find yourself having the same experience as the main game after one or two runs with a little knowledge.
If you want to re-experience the progression and unlockables feel free to reset. If you just want a taste of the "beginning" again, a few Adventure playthroughs would suffice.
