Level the weapon to max rank and get a the corresponding item required for the evolution. Then hit up a chest and you should get evolved weapon.
For early game, preferably select weapon that you can use to kill efficiently to clear packs and get gems to level up. Good support weapons can be selected after you have a decent starting weapon or two going.
The problem a lot of people had back in the day, and seem to still be having, is that the forest and library are easy to blast through by building DPS, but Milk has a lot of tanky enemies that'll just kinda walk through your knives or whatever to start smacking you around.
Remember, the goal is to survive, not to get a lot of kills
I remember bibles helping me out pretty well my first time in dairy plant.
Defensive weapons not items:
1. Freeze from Clock lancet.
2. Knock-back from Bible or garlic.
3. Damage shield from Laurel.
Freeze is god tier against tanky mobs like those golems.
Had bible, garlic, laurel, armor and regeneration but no clock lancet. Guess I need to try with that if it actually drops.
Evolved Whip can help keep you healed, as will evolved Garlic.
Evolved Axe has good damage. Other good damage options are Santa Water, Runetracer, and Lightning Ring. Dairy Plant also has the stage items to evolve Axe, Santa Water, and Runetracer, though they're hard to find without the map.
Don't sleep on Knives, either. They're a pain in that they have to be aimed, but once evolved nothing will shred a boss faster, and they allow you to wade into enemies without dying by simply melting everything in front of you. If you find yourself doing well defensively but lacking in damage output, Knives might be what you need.
When you have breathing room, consider stepping on the trap tiles, sometimes they send a sizeable horde of really weak enemies to help feed you levels.
