All together. Play the dlc levels to unlock the new weapons/characters. Note that you can also find the dlc content listed in the 'unlocks' list on the main menu.

Does that screw up the upgrades having so many weapons?

Are there more meta upgrades? In the unlock I was surprised there is only like 10

Think you might be misunderstanding something. There is a LOT more than 10.

Eventually you can unlock rising tiers of Seal
You can apply Seal to unlocked items in the collection to prevent them from appearing during level up.

Currently you can gain a maximum of 60 seals. The upcomming Castlevania dlc introduces mega-seals that will allow you to block an entire expansion.

Quick question that doesn't deserve its own thread: Say I get the Castlevania DLC. Can I make the game play the Castlevania music on any stage I want, including ones from other DLCs or the base game?

Yes, once you unlock the ability to select the music (which I think you get by finding something in the second level of the base game) you can select any music on any level, with no distinction between DLC and base game. They're even revamping the music selection to be more usable as part of the pre-castlevania-dlc patch, which is nice.

Certain music unlocks may be tied to other unlocks in the castlevania dlc though; I've never actually played around much with music selection and I'm not sure how it works with DLC. There's also the X factor of the castlevania DLC having tons of music tracks as part of it; I wouldn't be shocked if half or so were unlocked right out of the gate and the other half unlocked gradually as you got characters with corresponding songs.
