The content for all DLCs can be found in seperate maps, so you can still keep playing the base game content until you feel comfortable advancing to the DLC-content. You can also switch them off in steam, so that it doesn't get added right away.
But you also get the new weapons / characters in the base game right ?
(This game has SOOOOOOOOOOO much content without even the DLCs that if (for example) you have a 40-50 hours job + 2 kids + a pet, I am certain that it will take you 10 years JUST to clear the vanilla Vampire Survivors lol! If you have a ton of free time and really love the game, you should get the DLCs but they are so cheap, that even if you buy them after the rebate, you'll probably "lose" something around 3-5$; not a huge loss imo!)
Edit: you do unlock a ton of stuff in the original game (weapons/characters/maps), but you won't get the weapons and characters from the DLCs.
Typically dlc unlocks go like
> special map
> do a thing on special map to unlock character
> survive as x character to unlock their weapon everywhere.
There are 2 passive items you instantly unlock to be picked with the Arma Dio for whatever reason (not sure from which DLC though, since i'm also just unlocking everything on base game for now. Might also be from doing stuff, but i can't tell from what^^), but the rest is only unlocked by doing stuff on the new maps.
