Why are the NPC Shops all 'sold out' in the new Adventure mode after I've already checked them out once?

Even if I don't buy anything, step back, then get back in again, I can still buy whatever's on offer. But then I've went away like 3 full screens, came back once I've had the gold, and couldn't buy anything because evertyhing was 'sold out'.

What gives? What's the point lol? This makes all the most valuable items there essentially never available, because you cannot start the game with like ~3k gold to buy them all outright, you have to gather that gold first.

And if the access to buying those items is on some stupid kind of timer, then why isn't that information relayed to the player anywhere?

Once you have 6 passives or 6 weapons, you cannot buy any more items from the merchants. It has been like that on all 3 adventures I have played.

I haven't finished the 3rd adventure yet, but all of the merchants you encounter, on any of the maps (in any adventure), will not sell to you if you already have the item they are selling (even if it is level 1) and they will not sell to you if you already have all the weapon and passive slots filled.

You can also use the gold you save between runs, so you don't have to spend time farming it first.

Get to level 80 and you will unlock a shop level which has no enemies and lets you simply go in , buy what is locked exit and repeat.
