it becomes, i believe, 15% 25% 45% 65% chance, plus a bonus from luck, to not destroy pickups.
evolved pentagram definitely makes up for the lost xp later, but you still may lose multiple chests.
id recommend, if you have trouble, grabbing clover lvl 5 for luck before attempting to evolve penta. that way you start off with a chance to save items and by the halfway level the chance plus luck is around 80%
I try to rush the Pentagram as much as possible if I'm going to use it, as the early levels where it usually destroys everything are horrible but it's actually half decent at high levels, particularly if you have anything that boosts luck. And of course evolved it's fantastic.
XP gems can only be generated up to a finite amount. They will still "drop" after that, but they will be combined into a single red gem just off the corner of your screen. After you get some decent starter skills going, you can spend a while on the same screen killing enemies without collecting gems. Then, when you go and pick up the red corner gem, you'll get several levels at once. You can use those levels to power pentagram from 1 to 8 in a single go.
If you make sure to keep chests off screen so they don't get deleted, you can evolve it right after.
