Unlocking Toastie

It seems as if its impossible to unlock Toastie after completing the game as the non-red reapers no longer spawn. I tried doing it on boss rush but either i was too slow or it doesn't work

Just wait until you've unlocked the Forbidden Scrolls of Morbane and unlock her using her unlock spell. And pay no mind to those peeps who say, "But that's cheating hurr ke durr!".

Does the Green Reaper not appear again in the Dairy Plant? It's a chance at 3 fixed times in the run, but it's the easiest to try this unlock with the carts.

all the non-red reapers will always spawn in Boss Rash

green reaper still shows up in the Dairy Plant and Bone Zone

pink reaper when you go to unlock Avatar Infernas

blue reaper in Bone Zone and Gallo Tower

i did it with the trickster (pink one) when trying to unlock avatar infernas in Inlaid Library, no specific requirement just go far right beyond the gold ring near a piano

imo this one is the most repeatable encounter among the non red reaper variants cuz almost everytime i went on for gold ring in library, go a bit further to the right and there they are. No need to panic if u messed up the input timings.
