How to get past the grim reaper guy?

Keep playing. You'll eventually unlock the stuff that'll let you kill the Reaper.

One of them, at least.

I am on Mos Isle. I have evertything maxed out that it has given me. AT the 15 minute mark I just insta die lol

Some of the special stages (including Il Molise) only last 15 minutes. The reaper killing you is still a win.

Not ture. I seen people on youtube survive like 22 + minutes on that stage. They got some crazy perks. But I dont know how to unlock any further maps. I been unlocking as they pop up but I cant go any further., Not sure how to progress to the maps not unlocked yet. Gonna go back and redo old ones I guess

Go into the "Unlocks" Menu you find on the Main Starting screen. Everything you need to do for more perk unlocks can be found there.

The normal time limit for Il Molise is 15 minutes as said above, Red Death comes to kill you at that time.
The videos you have seen are surely from people doing a specific build to cheese Death and go beyond that normal time limit.

Thanks all I went back to the first map and started doing it again and unlocking things I missed

If you still need a hint, find a way to evolve the Laurel and/or the Clock Lancet. Combined these two make you nearly unkillable, especially once you unlock limit breaking.

The second stage, Inlaid Library, is the easier Map for Gold Grinding, in your current state, and unlocking stuff.
