I'm on the first level and first character. Are they coins? I couldn't tell if it was a ring or a coin. They seem to come out of torches. And does killing stuff not help me level up? I only level up from gathering blue gems?
Those are coins that the torches are dropping. Each one is worth 1 gold. Torches can also drop bigger bags of money as well. You will also get a lot of gold from chests that mini-bosses drop, one of these can spawn every few mins and can drop a treasure chest. The chest contains gold + level up for your weapons and items. Also, if conditions are met, you'll get an evolved weapon (evolved weapons require a maxxed out weapon + one point in the item required for the evolution, you'll either find these out via trial and error or guides)
Enemies drop exp gems. These come in blue, green and red version (ascending order and not including gems from pentagram weapon evolution which generates extra powerful versions of these three). To level up you will collect the gems that the enemies drop.
There's tons of unlocks in the game. Some make new chars available. Take a look at the unlock menu. Also there's secret chars that can be unlocked (eventually you'll get a secret menu giving you hints on how to unlock them) as well chars available after finding a coffin on each stage.
And yeah. Pick up coins to buy power ups, and keep an eye on the unlocks menu because unlocking new things that you can use to become even more effective is one of the core loops of this game. It's not complicated, but it is rather fun.
Several characters need to be found and freed first, if you see a ? on the map, go there.
The remaining non-secret characters are unlocked by achievement type actions (see the unlock menu).
Secret characters have more specific goals you have to do before they will be unlocked, you'll eventually get an item that'll unlock the secrets menu which will give you hints towards how to achieve all of those. Eg. (this is one that's straight forward, nor does it give away much by knowing it early), "Survive the Boss Rash with just one weapon."
