More or less, yes. Over time new mechanics / gimmicks get unlocked. Weapon evolutions, stuff to find on the map, curse, to name some.
Check out the unlocks and start with the first ones, eventually there's bossing and actual strats you can use
I normally prefer deep, complicated games so this doesn't seem like something I'd enjoy much less spend like 60+ hours playing but, I find that it has just enough depth to hold my interest. It's probably related to how you're constantly unlocking new and interesting toys for your next run.
For now I suggest staying focused on unlocking more stages and trying out new characters. There are a fair amount of unlocks tied to surviving 15 minutes as a character or reaching a certain level for that stage.
The OP already did try it for himself and his first impression was he wasn't impressed.
You're working towards living a ridiculous power fantasy where you destroy everything you see and then you keep getting more ridiculous until you can't even see anything you destroy.
...then you unlock a certain character who puts all your other characters to pasture due to how extremely OP she is.
Start by working your way through the list of unlockables. Grind out gold for power-ups. Learn how to evolve weapons. Early on it can be difficult to last more than 10 minutes or so, but Garlic can help carry you through the early game until you have more power-ups and better mastery of the game. Garlic pairs well with the Bible to keep enemies away from you. I should also mention, surviving 30 minutes counts as beating a stage, and you won't be able to make it to 31 minutes until later.
I'm sure it's not for everyone, but there's a reason this game is rated so well. It's very addictive, and the simple gameplay just makes it more accessible, and different weapon combos give it plenty of depth.
