Well I did unlock him on my first try right after my post, and the official way to do it would of taken forever, because death recieves 655,000 something health every level you gain. So if you reached level 100 that would mean Death has 655,000 times 100 health which means he has: 65,000,000 health. No thank you.
Really doesn't take long, maybe another 5 minutes max.
Crimsom shroud basically makes you immortal, and infinite corridor halves all enemies health with every hit so it not takes forever, sometimes just takes like 30 seconds to kill the death.

Inverse mode (enemies with +200% health), I killed the death at 30:46, I don't know why they put the final time at 31:00

Zebefreo above is correct: The key is to get "Mad Groove" Arcana so those far-away items come to you. Unless you're an expert or a sadist, don't pick it as your starting Arcana -- pick it as the 2nd one (around 10 minutes). The items will come to YOU, along with their mini-bosses.
...but the problem is, you don't get Mad Groove until you've survived to minute 31 in the Mad Forest to begin with!
So pick a fast character whose passives you like, start in the Mad Forest, and PLAN YOUR LOADOUT on the pause screen before you even get started. If you take a base-speed character like knife-barbarian, and you get started running North ~immediately, aiming a weaving path toward as many bats as possible to level up as you go, then you should be able to do a clockwise or counter-clockwise circle in about 21 minutes. You'll need to get Laurel and both rings FULLY upgraded (7,9,9), and yet still constantly be upgrading weapons so you can actually level enough stuff to accomplish that. Just having the Laurel plus a reasonably upgraded Clock Lancet will freeze Death and take enough hits to keep you alive for 60 seconds -- dance around so the clock always strikes him while he's popping Laurel layers on you.
You won't be able to actually kill Death until you get BOTH the Laurel+rings AND the Clock Lancet + pointy-sticks fully leveled, which is ~50 levels' worth of upgrades on their own. I like to add Curse in there too, to really maximize how many enemies there are to farm.
Thank you so much for your detailed answer, I actually managed to kill death in the Mad Forest.. I was trying to exploit the Clerici Method but eventually ended up grinding up and slaying Death with Lancet and Lauriel evolutions.
Although I read you answer after doing this, you cleared my mind on what the Mad Groove does! And it sounds like it makes everything so much easier. Does it bring treasure chests too?
