Most notable in this regard is likely Den'mohr cave (accessed where you get Elena just a little away from that temple) which has enemies that get stronger as you beat the rounds. After only a few rounds they jump to being stronger than all the post game dungeon enemies (yup, not joking) excluding the two super bosses so dropping the difficulty is one way to do them more easily if you need while grinding them as they're the best exp/fol grind in the entire game and if you know what you are doing with IC you can even do it as early as getting the Laeticia's home city with the castle (Alchemy lets you make end game gear, and yes there are ways to get the insane Fol super early easily).
For the achievements you can simply swap to Universe/Chaos at the end as necessary.
In short, just play higher difficulty if you want more challenge (not that a challenge exists in this game with how broken Nina the healer is and this game's balance issues in general). Most people will actually probably be comfortable on Universe for most of the game. Note: Do not learn Laeticia's Determined Princess EXP passive if you don't want to break game difficulty and avoid using alchemy until post game for same reason.
