We do not know yet how many planets there will be exactly but if it's a 130GB size game, there is a good chance there will be more planets than Star Wars Jedi: Fallen Order. If Survivor had roughly the same as the first game, I think the planets and exploration will be far more open world. Time will tell, Star Wars Jedi: Survivor is getting pretty close to releasing now that we are in April.

Okay, I just found a link to a few planets that may be in Star Wars Jedi: Survivor. This link may or may not be legit but by what I've read, sounds legit to me. There may be a possibility there will be even more planets than shown in this link. We don't know how many there are, games not out yet.

We know very little about how many planets we will visit or how they will be compared to JFO. We know the hub world (Koboh) seems to be larger than some of the planets in JFO, but we won't really know till we play it. There's also Courscant and some moon planet/base that the IGN previewer spent at least an hour on.
Double isn't really that unrealistic. Fallen order wasn't that large of a game in the first place. You should consider the small fact that they dropped last gen consoles for the sole purpose of having bigger environments and well... bigger everything. If you look at each thing individually you can find out that everything had been doubled or even tripled in some capacity. Which isn't all that surprising. Any developer of a successful title especially AAA will want to outdo their previous game by a sizeable margin.
Though like you said, we won't know until it comes out. However based on everything iv'e seen, it appears that this game is roughly double or greater than double the scope of fallen order.
New consoles bring new technology. Yeah environments will probably be bigger, but again that doesn't mean we will have both vastly larger planets AND double the planets.
The only thing you can say has been doubled would be saber stances. Traversal had clear incremental improvements with the grapple gun, dashing, improved wall jumps, etc. Combat is adding companions and the additional saber stances. Graphics are obviously improved which is typical. It's all typical sequel incremental improvements. And if you are right, that's great! I'm really only trying to manage expectations because I do not believe we are getting 8+ planets that are all bigger than the ones in JFO.
