Double bladed is arguably the best defense because it can animation cancel into regular parries and the force parry, while niche, is extremely powerful against certain moves and the upgrade AoE release gives it some much needed crowd control. Double lightsaber throw and the delayed strikes give it a ton of flexibilty on top of its already good, fast moveset.
Saber staff has really good moves in general, even though it's meant to be an AoE stance it has really strong performance in 1v1s as well. It only really is bad against some of the larger animals because its animations are long and don't stagger them much.
Blaster stance is super flexible and overpowered, but admittedly it is a little clunky feeling and doesn't have the most generous moveset since it's more like a cross between using a cutlass and rapier. It has some of the best offensive and defensive upgrades though and is only really weak to being overwhelmed, but you have the ricochet shot upgrade to solve that if you want, not to mention being able to simply pick off weaker enemies at range.
Crossguard gets a lot of hate for being too slow/clunky but it has so much damage and stagger, it just requires a more deliberate playstyle. And it's not really that much slower honestly, just slow enough that it's difficult to use against faster bosses and groups. It is probably my favorite which I wasn't expecting
"Double bladed" means one sabre, but two blades
I love single the most due to aerial ace/assault, stupid good move. Easily lets you punish enemies that can be staggered by double jumping/dashing into it, which often leads to more regular free hits afterwards. The lunge and dash are also good for punishing enemies from a safe distance.
I feel like I cheated using on some fights, beat the last boss on my 2nd try on Grand Master not because I learned his attacks and how to fight him but because he kept getting wrecked by aerial ace. He's doing his 10 minute combos when I just casually jump over the guy and all his attacks and stagger him with it.
Dual has animation canceling, which means you can't go wrong with it theory, but I haven't played much with it.
Double I also haven't played much, but it doesn't seem to have much going for it from what I've seen. The spinning lunge is kind of fun when you are using it without locking on, but aside from that I found it underwhelming. Aoe against trash enemies only stands out in in the early game, as later you have a ton of tools to deal with them. Nice reflect though.
Crossguard is the most fun to me, and it's quite good against bosses too. The ones that can't be staggered weren't going to let you get in more than 2 hits, and ones with a block bar are easily broken with its attacks, especially with the shatter perk. It's reflect is great too against most enemies.
The most broken one is probably blaster though, it lets you easily weave in stagger shots between swing and blaster parry actually parries most red attacks. Between the ability to parry almost anything and stun lock stuff you barely have to even employ defense.
Maybe if they called "Crossguard" -> "Triple bladed" it'd sink in :-P
The only good thing about it is that you can block cancel out of some of your animations, but on grandmaster difficulty that isn't much help. You still can't dodge cancel out of any animations, and enemies spam unblockables so much on grandmaster you're still going to get screwed committing to any attacks close range.
Blaster stance is the way to go, with double blade to deal with enemy blaster spam.
