Is Grandmaster much harder than it was in Fallen Order?
I beat that, it was challenging but not frustrating, I've heard many bosses here have 1 hit kill attacks though and I don't really feel like dying 200 times to the same boss so I might not even try

I only remember there being three bosses with one hit kills. But yes, in general I think the grandmaster difficulty is more frustrating than it was in Fallen Order.

I haven't finished Grand Master yet, but in my Jedi Master run only two enemies could 1-hit that I remember and they are optional bosses. I could be wrong though and there could be more, but I don't think there is an overabundance of 1-hit kills.
Just finished Fallen Order on Hardest and enjoyed it. This one is a different story, my friend. Encounters with godzillion of enemies each requiring different counter at the same time. Rancor that kills you in 1 shot with 80% of his attacks.... hf
Rancor and the oddgo bogo or whatever the lizard thing can be pretty tough they do indeed have 1 shot kill red attacks that they spam. Everything else is fairly easy if you're a person who plays dark soul type games.

If you don't mind using Blaster Stance, as I know some feel it doesn't belong in a Jedi game, a single charged blaster shot will instantly stop those red attacks.

On GM mode, I was doing fine in NG+ up until the Vader fight. NG+ does not help at all there because you have to fight him as Cere, who has a useless special power, and is limited to just 4 stims.

I found Vader not bad, really only the one red grab to avoid. Bode was harder IMO. I beat everything but double Oddgo , rancor on GM NG+.
It's actually easier than fallen order since there are less combat related bugs compared to the predecessor.
Both this and the first game are relatively easy. I recently finished fallen order and on average I needed 2-3 attempts to defeat a boss. I mostly died because of how clunky some combat elements are in the first game.

This one however fixed a lot of it. Imo the superior version when you purely judge the gameplay
