I tried to talk to the guy who supposed to open the door to the chest in the saloon but now he just says: "talk to you later" even though I've talked to him more than seven times by going in and out of the saloon entrance so I wonder what's going on?

There's a locked door next to Moran who always hangs out next to the bar counter and you supposed to talk to him 7 times and then the door will be unlocked but I can't progress his conversations even though I have talked to him more than 7 times.

what? You mean the door on the left side of the bar(Facing the bar)? If that's the door you mean, just play the game a little further, I won't 'spoil' this super early game thing for you by saying what it is I guess, but if you're talking about the door I'm thinking of you really should just play the game before making a discussion lmao
