Oh I thought the red was unlocked when finishing the game on any difficulty, I only did one playthrough on grandmaster so I just assumed it was the case

No, you earn the red lightsaber on all difficulties in ng+.

There is no unique reward for beating this game on any difficulty level above story.

I don't see the point in higher difficulties to be honest, especially when there is no real incentive to do it, if its just for 'i did it' type of bragging, i just don't bother.
