To stay safe - put up block whenever you feel attack might reach you (the advancing left-right swipes attack has deceptively long reach...)
This was the first side quest i came across so i feel your pain.
I will say this though, for anyone that only wants to play on grand master and thinks the rancor is brutal, you might as well refund then because the rancor is easier than the regular enemies. This game takes the Dark Souls 2 approach of spamming you with hordes of enemies, the difference is that these have guns and rocket launchers so you don't even get time to heal or use powers.
The fast load times really do make these Souls type trial and error boss fights where you die in 1 hit and have to reload 100 times a lot less time consuming, lol.
I even uploaded some gameplay of me beating the Rancor on Grand Master difficulty as a low level without taking any damage.

All I can recommend is using the dual wield lightsabers as you can block out of an attack animation any time during a swing which is a MASSIVE buff.
Also jump over his double ground pound and try to parry his super slow hits.

There's even time to get a jump basic attack in between both stomps.
After red grab misses you have time for a full combo. Otherwise, you'll only have time for 1-2 strikes before needing to parry again.
In order to take advantage of breaking it's guard you simply gotta run forward while it's happening and you'll move within range to get hits in.
On the attack where it spins to its left while swiping, then double swipes back again will miss entirely if you run up close before the backswing.
After half health it'll start combining more of its attack strings (eg, will always perform a backhand after the slam attack with left hand). So you'll have to parry one or two additional attacks before your damage windows.
The only things you're allowed to get hit by are the stomp shockwaves since everything else will kill you, but it's honestly not bad once you get the hang of it.
Best part is after you've beaten it you'll basically strut towards every large creature type thereafter like the Chad Kestis you are.
