Continue playing after story ends?

I was wondering if after you've completed the main storyline, if you can continue exploring the world and doing side quests? Or should I do all those before I finish the story?

Yes, you can. The game even gives you a broad goal of "Explore the galaxy."

You can finish the story and than go around the planets to clear out whatever rumours or collectibles you have missed.

I have finished the game some time ago but I came back to see how patch 5 works and if there are any improvements--there are very few for me if any. However, I have finished bounty hunting and that is definitely worth your while endeavor.

they also give you bonuses and incentives to go onto ng+, once the game is stable im def gonna replay

There's more story to discover through "echoes" scattered in places where an NPC had been during the story and dialog (both direct and environmental conversations). Sadly, the Beedee upgrade won't point out all of the new echoes. They're not available before the finale.

I consider it an extensive playable epilogue regarding the story, but it's only exploration-based—no rumors/quests involved.

Yes, I just finished the main story and I will continue until 100%, 100%.
I think I will also start an ng+ game.
