anything worth checking post game?

I did everything before the boss. just missing one fish.
should I bother going to every planet to check if there's anything new?

ng+ gives new customization options and then modded runs exist aswell

There is new stuff post-game but it's story-only and found through exploration and conversation. It is not available before the credits roll even in NG+.

As one who enjoys story, that stuff filled in some gaps in what happened and shows an epilogue of how everyone is affected by how things ended.

If you're checking to see if anything is locked out post-game, only one achievement can't be completed post-credits, but if all you have left is a fish achievement, then you're not locked out of anything post-credits.
