I'm looking forward for the artist and the monastery DLCs. Because things I like the most about the game are deep RPG mechanics and historical context (medieval culture)
i quite enjoyed rebuilding pribyslawitz in KCD1 and i hope that building the smithy will be enjoyable too (and i hope that that dlc will also add lots of new weapons and i would love it if it would allow us to build our own armor too but we will see) but even without new weapons and armor the dlc sounds good to me
also if the barber is like it was in KCD1 its not only the hair style but you can choose between a few beards as well and beards are visible in dialogues.

I totally agree with horse racing. In every game i hate those kind of missions they just feel totally nonsense fillers without any ingenuity
As for the rest, the criticisms are valid for many. I think I would still enjoy them, but from the promos we have so far, they do feel a little more like filler than story-focused/combat-focused content.
We'll see what we'll see when we finally see it.
At least in the first game we got a DLC where we could have our own village. That was cool
The equivalent here seems to be that you will own your own smithy
