Wait I cant run from combat
Am kinda far in and have found myself in combat for the first time whilst not wearing any armour.
I am trying to run away but every time the enemy is about 10 feet behind me I all of a sudden cannot run.
Was this the intention? Who came up with this mechanic?
Its kinda dumb as I cant disengage and return later.
With all the hype of immersion the bugs are very disappointing.

Sounds more like your outta stamina or running through rough terrain such as mud/bushes.

You can disengage from combat provided you can out run them or lose them. The speed stat determines none sprinting movement speed and allows you to control combat somewhat. It is derived from agility stat and what you are wearing.
Are they stopping you fleeing or do you have the stamina to actually run away?
When you take HP damage it also reduces your overall amount of stamina, making it harder to run away.
Use horse to escape situations where you have taken damage.

If they catch you and hit you I think that stops you moving. Or at least it did with the dogs that attacked me. They were a nightmare. I nearly had to restart because I couldnt get away from them and kept dying. In the end I had to sneak around the lake shallows to escape.

The problem comes when trying to break lock on. Lock on is horrible as it ties you to the enemy with a rubber band. I don't know why you can't have lock on without being tied to your target, other games do. Unless it's a console thing.
If you have lesser or equal stamina/speed than your enemy you cannot run away. Of course not. Thats not a bug. Have you tried to yield?

Sometimes it's hard to escape, especially if you dont have those fast running perks, you just have to try and put trees and bushes in between them and you and you might get away.

If not, then load an earlier save. Remember to drink schnaps often ;)

You can run from combat if you time it right and are faster than they are. That's probably not gonna happen early in the game.
There are quite a few perks that improve speed or lessen stamina consumption. Even in full armour, I can outrun all enemies. I have the impression kiting is underestimated as a strategy in this game.
For context, they are fully armoured. I have my shorts on.
I had disengaged and used terrain to slow the npcs, ran around trees, through bushes etc but for some reason I come to an almost complete stop even on open terrain. When I turn around they are about 7 - 10 feet from me and we engage in combat.
I have quite a few agility perks, I am level 24 I think.

I have reloaded and this didn't happen again, I am guessing its just another bug.

It's honestly not a problem when you get better at disengaging and maintaining your spacing. I find myself often tapping shift to just get better footing and not be surrounded in larger fights. Practice makes perfect, this isn't a hack and slash game like Skyrim which is why a lot of people are struggling with the combat, which has also been made even easier from the first game.

How do you imagine directional attacks and stances without lock on.

Anyway it's disabled by holding sprint key

Nah I came across a random camp and wanted to end them all quietly, got caught the first time which is when the post was made.
I reloaded and waited until they went to bed, they will never wake up.

Holding 'Shift' (you know, the 'run' key) instantly breaks lock on if you want to turn and run. Holding 'Right Click' also breaks lock if you just want to switch to a different enemy.
git gud.
Run in a straight line and you will outrun them at that level. There is no reason to bob and weave. You are not being shot at.
