You could just keep saving before the bandit by the lake and keep retrying the combat until you get it. The key is blocking in the right direction and striking straight after you've blocked. Keep your head and don't panic when you get into a fight.
But of course you start of very weak so even using the huntsman sword is tricky. As soon as you can upgrade your equipment. The more you do combat the better attributes you get.
When fighting multiple aponents move to the side until one of opponents is behind the other and can't attack you. Prioritize targets with less armor as they die faster.
Don't try to counter everytime you block, manage your stamina, you don't want to run out.
Don't get frustrater about getting blocked by enemies, think of it as just more exp for you. Don't get frustrated by loosing to armored opponents in early game, once you've better equipment they will stop being a problem.
Once you have better sword complete the quest chain for your dog, it will make early fights easier by distracting opponents.
Namely blocking seems to be a law unto itself, I can perfectly parry 5 consecutive hits, but at random times the parry won't appear and the attack is basically guaranteed to hit.
Dogs are another issue, the gameplay basically boils down to "wait for attack" "block hit" on loop about 3-5 times per dog, per pack, of which there is a pack every few hundred meters.
I think the most annoying part of it all is that I can swing at someone, the game then resets the animation as I "enter combat", and the hit doesn't count - I can see and hear this is an enemy, why can I not get the first hit in.
