Yeah, it is a total shame. Also that we cannot do armor.
Cooking could be like alchemy, put stuff in a pot, put a lid on it, stoke the fire, add spices, etc
And with that being said, the games take place over a couple of weeks, the reason they added weaponsmithing to Henry is because hes just "relearning" what his dad taught him over years. You cannot learn to switch from weapons to armor in two weeks. Not possible

Making bows are a different art entirely to blacksmithing, requiring an entirely different knowledge base requiring extensive knowledge of woodworking.
When it comes to gunsmithing, there's only a single person in the entire game who makes firearms, they're a relatively new technology at the time so there's no way Henry would know how to make them.
Those are the lore reasons, in reality it would of just taken a lot of time and effort to create the systems for all of these, especially armorsmithing. This's one of the faults of trying to be too immersive, as with something like Skyrim it just happens in a menu, here you go through the motions in real time.
