Why is some dialog german and english in one sentence!?

Intentional. It's meant to indicate that Henry doesn't speak German (he speaks Czech I think). I find it to be a nice touch

English dialogue is supposed to represent them speaking the Czech language, Henry's native tongue. Other's speak German in game as there was a large amount of Germans historically. You'll see the Italian and Latin also spoken in their language before switching back to English (Czech).

I play the english version of the game. But sometimes I have an NPC start a sentence in german but ends the same sentence in english.
Its like "Schönen Guten Tag, Was can I do for you? Ich glaube, I have not introduced myself to you!"

All the English in the game is actually Czech because this is 1403 in Bohemia, not Britain. The German is German because Henry doesn't know German. It's really not that complicated.

The developers wanted you to learn a bit of the language of the gods.

Is this the devs way to simulate someone talking to you and you dont understand every word?

What the developers intention is I can't tell, but how they wrote the dialogues, this is what happens, when you have people with different mother tongues whoy try to communicate with each other. They don't always know each word in the other language, so they mix it.

This would be the german-english thing. When guys spoke latin in that time, they wanted to show of their skills and impress and fool people, example: 15 century stationeerers, that are christian guys who have fake reliquiae (a chicken bone is Sait Andrwes finger bone) and the people were giving them money for a blessing. Some sort of that guys is also in this game, I think his name is Gregor, you meet him on the roads.

In the 2025, whenever I go to my retailer buying, there is a romanion beggar standing. I speak to him in a mix of spanish, english, german. Because I don't know every word in spanish, okay? Understood?

It is sometimes exagerated. but people in multilingual places do sometimes use code-switching. Have you ever heard people from Miami?

Back in the day Bohemia was part of the HRE. So the nobility speaks german and the common people try to copy it.

English defaults to Czech. Every other language you hear from that perspective.
Analogically if the game was set in medieval England you'd hear default English, and any foreign language in that destination language.

It makes more sense when you use Czech voiceovers, provided that you speak Czech or want to read subtitles, because then basically everyone talks natively.

So you would have Czech majority, Adder talking Polish, priests using Latin, Germans talking broken Czech, Cumans doing the same.

In Bohemia, Czech was the language of the peasants, while German was considered the language of the nobility. Also, it was advantageous for merchants to know German, since the main contingent was German. In addition, Bohemia was part of the Holy Roman Empire of the German nation, and this entity was ruled mainly by Germans.

They explain that early on in the game that somehow using German words seems noble or at least of a higher educative standing - something like that

Doesn't give me much really since I'm Austrian but the quest with the Cuman, or the Polish guy - :D hahaha that was fun - didn't understand ♥♥♥♥, but we had a blast
