Changing playstyle okay?

Very curious of changing my playstyle would hurt me in anyway and make the game harder later on, I'm playing sword and shield knight right now but have been tempted a handful of times to try a thief/murderous route or archer and wanted to know if it'd make the late game harder since I wouldn't be leveling up my sword skill and stuff.

If you become a beast with a bow its one of the best glass Canon builds in the game.

No it will not hurt you at all! There is a potion called the Lethean Water potion you can get. It will reset all your perks so you can make a better character NOW LET ME BE CLEAR. This is an amazing thing! This can allow you to skip beginning perks all together and grab later on perks making your more powerful than you would have been if you just skipped it all together. Just make sure you go to sleep right after it makes you super drunk XD

You can be both at the same time. Enemy camps respawn, so you'll always have someone to train on.

If you got alot of time, sneak around every night, savescum and pickpocket every one sleeping, open all locks, spam archery contests, spam melee training etc.

to add to anything that was said above. also dont skip on books. they are an easy way to learn multiple talents when you are not activly using them. also teachers are good (thought a bit expensive later, but money isnt exactly hard to come by in this game.)
