I would suggest that learning feinting as this person says above is very important.
I almost stopped perfect blocking/riposting because 99% of the time they always block the riposte. I still perfect block, but generally don't riposte unless I feel like they are a low skilled enemy.
How did it go?
I love the combat system and don't find it that hard. I'm running around in fancy clothes, not even wearing armour, and I do pretty well in fights.
And I'm an old man with a full-time job.
Yea that's not the "average gamer"
These are the gamer dads and moms that think devs should cater to them because they can't play their hobby more than 5 hours a week, not gonna happen, find another hobby or tell your wifey she'll be fine without you for 2 hours.
I'm now doing a zero death run. Saving and reloading is allowed for everything else, but not for combat. Dead is dead. I'm now in Kuttemberg en no deaths yet. I'm not really very good in fast mouse and keybord reflexes, so it can't be that hard to survive.
Early archery contests were a game changer for me. Easy money and easy leveling of strength and agility. Now, I don't get into real fights until I'm fully trained and in complete armour.
If you can get to the point where enemies have a hard time hitting you at all, try wearing lighter armor, starting with your head and legs, and see how much easier it becomes to dodge and move around. I'm not quite there yet in KCD2 but my third playthrough of KCD1 was with all negative perks and leather armor only, except for the real hairy moments where you take part in battles.
