When you have most of the combat perks you can one or 2 hit most stuff, and it becomes a bit more "fun", dashing in and clearing out the weaker ones so you can focus on duelling the tougher enemies, but being surrounded at any level of prowess will end with you being killed rapidly.
I do agree that the general level of bandit armament, especially in the early game, is difficult to deal with. coupled with your inability to hold a bow steady or perform masterstrikes rapidly a lot of the combat turns into running until all but one or 2 give up.
It gets easier, but it never becomes easy enough that you can just wander into multiple combatants without care, even with the best equipment the game has to offer.
Dont be afraid to send out a few cheap shots with a bow from a distance.
If its a camp, lure one away at a time. You will have a geat set of gear after 2-3 camps.
Shield lowers the stamina costs of blocking but if you utilize dodges they are often better until you unlock some combat perks.
Head protection is important. Blunt melee weapons at early game do a ton of damage against the little-nothing most enemies wear. Blades/slashing performs poorly against the early game gear but get better as the armor tiers plateau in strength. This applies to you.
Two most dangerous weapons to you early on are blunt (as above) and enemies wielding one-handed swords with one-hand. Try to take them out first. Their animations for using a Falchion, for instance, are faster and harder to block if they do not have a shield. Henry does not seem to benefit much from this although there is a perk or two related.
By the way, dodge is really good.

Yeah, maybe not "full plate", but I am thinking if they are really that hard up to be camping by the side of the road, they could sell a piece of armor.
You could get gang banged by a mob of peasants. They don't even surround or flank you in this game
If you can't win a straight up fight you could try other methods like running away, stealth or just surrendering and paying a toll.
I think as your combat level gets higher it gets easier but personally I find it refreshing that I can't just steamroll any encounter and need to find other methods of dealing with things.
I think too many games these days focus too much on the power fantasy to the point where the player is trained to believe that they should be able to take on any encounter, that all fights are winnable because they are the protagonist, it is nice to have a game that does not do that.
