Attila the horse?
I've seen the horse called 'Attila' twice so far, first it was at the hilltop castle's courtyard at the first region, and I just found it at a stable in the second region. Can this horse be acquired at some point? I can only check it's stats and it can't be attacked.

No, you can't. This von Bergov horse.
Next, there will be a quest in which you will need to find this horse, but even there, after you find it, the horseman near Kutenberg, who can make horses yours, will refuse to make it yours.

while riding Attila During the quest to get him back from bandits, use this command just do not go back to return him to Groom Hashtal. If you do he still will be your horse and will come to you if called but you cannot ride him. By Far Best horse in the game that I have found Hands down
