When you get to the 2nd map in the game you'll start off knowing where to sell such goods.
My thoughts on both accounts there..
After a quick google I did find this ...

Legally, you can only hunt rabbits, wolves, and wild dogs, though that doesn't mean you can't hunt illegally. There are many hunting spots throughout the world with almost all of them being far away from just about anyone, and as long as you're not caught you can easily get away with being a poacher

On second map (Kuttenburg), your first encounter (at Devil's Den).
You can sell as much poached meat to vendors as you like. The system is bugged. I sold 1000 poached deer, hare and hog meat without even getting a comment from vendors. Doesn't matter who you sell it to.
That's because it's broken.
