Shot placement and arrows matter too. Takes 2-3 to kill a bandit, sometimes 1 with a headshot. Armored guys can take up to 5 from a bow and 2 from crossbow.
To be honest, longbows in KCD2 are bit disappointing. I have not tried crossbows so maybe those are stronger and more usable for 1-hit kills from stealth.
you can get one that is 500 strong but you can't use it on horse.
if you think they are weak put poisons on them.
let bleeds and poisons work their magic.
and kite.
makes everything ridiculously easy.
then grab that, but again isn't on horseback , and you have to aim for the head.
it will 1shot them. is the one you put your foot into the thing to reload.
500+ power.
i've never tried it for stealth kills, so not sure how quiet it is.
There are a few perks that improve the damage. But so far I am only missing ambusher from the stealth perks, and I still can't take down a Roe buck with a direct shot to the heart.
I guess the heartseeker perk only applies to humans and not animals.
put weak dollmaker on your hunting bolts and it will STOP them from running.
then you can send dog, or run with your sword etc.
you can 1shot deer around midgame.

Using poison is dishonorable, and it is also doesn't make sense if you want to roleplay.
You do not poison an animal that you intend to eat for obvious reasons.
In KCD 1 it was a rather nice achievement when you can start out by shooting hares. Then get better and better bows as your Strength and Agility increases. Then when you get a longbow you can take down an animal in one clean hit. That is hunting. Not putting poison on the arrows and let the poison kill it for you.
If I hunt and hit the animal straight in the heart. I expect it to die within the first shot. Just like I do in real life with my rifle. Sure. It might run a little, but it should fall over as its pump doesn't pump no more. Especially not when you literally pick perks to increase this type of damage.
The fact you are pretty much always required to two shots with the equippment you can get early on no matter how much money you have, just ruins it. The fact Mutt doesn't even have the ability to track the animal, or just run around in circles around it when you send him on them is just salt on the wounds.
How come there isn't a single longbow with more than 110 power in the early game at all? Why is the Master Hunter bow not even a good hunting bow? Kind of feels it doesn't deserve that name as I can buy a bow that is better.
Then it is even more stupid that perks that increase the damage of bows isn't even in the marksman skills. In terms of hunting there is few perks that actually applies. The only skill in the whole Marksmanship skill tree that applies to hunting is Steady Aim. You can also count Forbidden Weapon, but that run the risk of just bleeding the animal to death, which causes them to die somewhere in the forest where you have no idea where they ran of to.
That is it. The other perks that improve hunting skills is actually from Stealth with the Ambusher perk.
Why should you train in Stealth to a high level to become a better marksman in order to be able to kill a deer in one shot without poisons?
The issue isn't about not killing animals. It is the fact you are REQUIRED to use poison instead of arrows to actually kill something with bows and crossbows that is the issue.
If you require to use poison as an extra damage type. It only means the weapon is bad. I do not need poison on my Common Longsword in order to solo a whole army in the early game.
What warhorse should do is to add a few actual longbows early on that has more power than 110.
