Mid april
You can do hardcore mode right now by wearing only pants and shoes and fighting with carpenter’s axe. Then reset all of your perks with Lethean Water and don’t use any of them.

Or just lower the brightness of your display to 0, the possibilities are countless. LOL

PS
I can’t finish the damn game on Normal right now because of bugs. I don’t want to see any new content before they fix the current one. If one stupid barber update can trigger this mess, imagine what a hardcore mode could do. 🤪

Hardcore mode was great in KCD1, but now sure how it will work here without some major changes to quests. I can't imagine running back and forth across the map for the psycho Voivode without fast travel. In general, most quests seem to be designed for fast travel, in some cases for no apparent reason. Like, you get a quest in one village and the quest target is in another village across the map. Why? Seems like it could be a lot better to keep quests somewhat geographically constrained for lore purposes.

I feel you buddy, i had this exact thought.
At the same time its deeply immersive to never fast travel, to explore the map and get familiar with it. Then a little planning on stacking missions on the same place should help.
Anyway, ♥♥♥♥ the Voivode.
Hardcore mode is already in the game, and you can access it

Put -devmode in the game launch option to access console command, and when you are in the game, type wh_sys_GameModeSelecting = 1 into the command, then choose to start an new game, you can then start the game in hardcore mode.

What do you mean "imagine running around without fast travel"?
That's the norm. I'm faster without fast travel. Not IRL, but in-game.
Fast travel never use galloping, or headstart when you're on horse and you may not even arrive on horse, which is even worse when you want to sell a stolen horse, you fast travel and it's gone, although you were riding it.
If you always use fast travel you don't get good at navigating the Region, which will make it even harder in Hardcore.
Most of the time I didn't even need to open the Map anymore, because I just know where I am and where I need to go.

The Region is not that big actually.
You can ride from the Rocktower Pond FTP to the Apollonia FTP in less than 5minutes.
If you use bad routing it's still less than 10minutes to cross the entire map.

What I want to say is, FT can be convenient every now and then, but if you fully rely on it, you're ruining the immersion for yourself more often than not.^^
