How late can you do the miller quest after the wedding ?
i did go with the blacksmith and found out you can do the miller quest also while being in the castle, do you have to get it while trying to save hans or can you just do it also later ? I wonder if I should put time into doing it now or not

I've completed the main story and just went back and did that quest line last night. Still totally doable at any point in the game, it was just ridiculously easy with my characters stats now.

It is possible, but in view of the story, it no longer makes any sense. It's also a tutorial quest series to learn stealth, stealing, lock picking and fist fighting

The dialogues change quit a bit since you already know about gunpowder.
There can be a bug, when you find a book and go further in the story it can disappear from the inventory, but it's not a problem, because it will re-spawn in the same place where you find it

without spoilers do you ever go back to the first map in terms of story?

Nope. Unless I'm forgetting something once you go the Kuttenburg region you are there until the end of the game. Obviously free to go back for side quests or exploration or whatever though.
