wait for them to attack, parry and riposte, axe should swing fast enough to hit 1-2 times more and kill them before they can run away.
late game your strength and skill should be high enough to just 1 shot them with any weapon.
1) Never chase
2) Face the one that's coming after you
3) Block on green and take ONE swing after the block. If you hit or miss don't waste another swing. After the block the wolves will turn, circle and come back.
4) After your repost swing turn to next wolf that's attacking and repeat
I wen't crazy swinging my sword randomly maybe a dozen times and never touched them, even when it was cornered between rocks and could't move, it didn't look right a all. Can't tell if it's a bug or just poor implementation.
i get that same feeling.. it looks like my sword should hit them but it doesnt. I also notice this on some NPC's ive fought.
this is what ive been doing, using a sword and shield. maybe im not attacking soon enough after block?
Im going to try to use an axe like someone suggested.
Try a Glaive
I also like it for hunting, you hit stag with poisoned arrow once and it can only sloooowly walk away.
