Big waste of time, potions is the only way to make money now.
There are one shot kills but you need a better bow/crossbow or at least better skills.
Potions, you say? I found the brewing process to be too tedious and don't see that auto-brew perk. Is there a way to auto-brew?
The best/fastest money-maker for me has been the archery contests so far.

I don't know how your brain works, but I have an idea judging this juvenile answer. :-)
Animal KI is painfully stupid tho. Even if they see you after you wounded them 5 sec earlier they won`t behave different. Also it`s not possible to wound them so that they move slower or die slowly. Rdr2 had everything right hunting for me, this is like 5 steps back.
I don't disagree that it's janky but there's method in the madness.
Even if you're hunting on foot, the game tends to always return to where it was initially spooked from.
If you have a decently strong crossbow, it's a 2-3 shot kill.
You pop them, they run, come back minute later, pop them, and they eventually fall over. Can get 2-4 deer in a few minutes.
