Best way to win these duels where you have no armor is to play very passively and fish for master strikes. If you need to block, just perfect block and do not attack back to keep your stamina up. You will eventually catch them enough times with master strikes to defeat them.
This is only true if you grind your stats and skills high enough. If you have not grinded excessively or not used certain weapon type, no matter your "skill" you will suck at the combat.
I can defeat heavily armored knights, for example the one you can duel in Sigismund's army camp for a quest, with a short sword in 1 or 2 hits, however, I had to duel him with pole-arms, which I did not use and the duel dragged for over 10 minutes and we both broke our weapons at least once. I finally defeated him with a weapon downgraded to tier 1 from original tier 3, which means I broke it twice. My combat skill was at 6 initially and ended up at 9 by the end of the duel.
