Got a wolf with 2 arrows in its head as well, still eager to fight.
As far as I remember, in KCD1 a one well placed arrow could strike down a deer.
Wouldn't expect it from a boar though. Historically they were hunted with spears rather than arrows precisely due to their thick skin and skull arrows could not penetrate.
Use dollmaker poison they won't be able to run away it's pretty OP against animals and humans. You can get recipe from gipsy at nomad camp.

It works.
But it feels dumb.
You shoot a deer in the right eye. It runs away. You sit. The deer returns.
You shoot a deer in the left eye. It runs away. You sit. The deer returns.
You shoot a deer — with arrows sticking from both its eyes — in the body and it falls.

Literally had this very situation a couple of hours ago.
Any other method is unreliable until specific stats reached.
I wonder if there's anyone able to enjoy this kind of hunt.
Still seems a bit weird to me in a relatively realistic game that a deer or wolf can run with a bolt in the head...

In game's defence (although I don't really want to defend it), a poor shot and a bad arrow could - theoretically - just wound the creature. It is a rare chance, but it's there. So there is a place for some non-lethal headshots. But it should be extremely rare.
