Some of the random encounter bandits are stacked for sure.
It's why no matter what else I'm using I always pack a longsword, which are leagues ahead of any other weapon.
I kinda wish they hadn't regressed the combat system so much so I could get face pokes in like the first game.

No, seriously, me too. I'm old, my reflexes are shot, and I can't be arsed to learn all the nuances of combat. That's where levels, potions and other methods come in! Chug a bunch of potions, Artemisa, Aqua Vitalis, Painkiller, Marigold, Buck's Blood, you can even put them on your hotbar if you can't prepare beforehand. The potions basically turns you into a demigod, even I can hack a camp of bandits to pieces by randomly mashing attack. Level up your stats and weapon of choice to make it even easier. I maxed out most of my stats and I'm basically a medieval gigachad, barely even break a sweat in combat even in late game.
And oftentimes don't even have to. Dunk some arrows into Dollmaker potion and pepper them from afar. It makes them unable to run or swing a weapon right, tanks their stamina, you can run laps around them. They often surrender before I even lay a finger on them. Or just sneak up to them and have a good old stabby time. Or poison their food/wine.
If it's not your cuppa tea, there are so many methods to avoid combat entirely in the game.
I would recommend downloading some mods, or tweaking the table values yourself (simple XML edits).
