Knockout blue sword symbol meaning?
When trying to knockout someone from behind a blue symbol appears, what does it do? I press left click but somehow the enemy still manages to free himself

the window time is extremely small, unless you got high skill already knocking people especially guard in full armor is extremely difficult
I think they still have a chance to resist depending on strength etc.

For stealth kills, it's the different between a silent kill and a messy kill.
Stealth kills work quite fine if you level up your stealth, but it's tricky when your stealth level is low since many enemies are going to resist.

I can't give exact specifics cause i haven't played in a second but i would refer to the help book in the game that gives you all the tips and tricks for combat and the like. It's either in your pause menu or journal. They should have a knockout tab related to stealth.
As others mentioned its strength based. More strength the enemy has then you the shorter window span for silent kill/knock out is. Basically when you perform a silent kill, if enemy has higher strength than you they will have high chance to counter it at which point you may get a shield to counter them followed by blue sword to attack again. If you time it you will execute stealth kill if not they may push you away if you fail block or yell alerting others if you miss blue sword.
The blue interaction is meant to make the knockout/daggerstab more SILENT (Henry will muffle the victim). It doesn't impact your success at all (that's more dependant on your strength and eventually never fails).

Those little info popups when you do a maneuver for the first time are quickly forgotten. I think you're suppose to left click as soon as you see that one because he's trying to wriggle out of your hold and that makes Henry defeat his attempt. There is another thing that I believe requires a right click that may flash after that if you execute it right but the help menu should have more info. There tutorial system is kind of weak though. Its one of the things in this game I think need improvement. When Hensel is training you in stealth for example, you should get an option for him to repeat his instructions whenever you need it.
