Which quests can you get locked out of? (spoilers)

Regrettably, I missed out on a romance by not immediately turning in Rosa's book. The main quest made it seem urgent to continue, and it wasn't made clear that I'd miss out on content after just one more main quest.

Besides working with the miller vs. the blacksmith to get to the wedding.. what other quests have you found that you get locked out of, and at what point in the main story?

You can do miller / blacksmith quest after the wedding. I chose a blacksmith path, and visited miller later to finish his quests.

The quest changes a little, but I was able to complete both of them as well.

Mostly I'm looking for what other quests and sidequests you can get locked out of if you progress in other areas. I want to see as much as I can in one playthrough. I'm sure Rosa's book isn't the only one..

I just did this and because I went on to the main quest before giving Rosa the book, I could not romance her. I wont make that mistake on my second run.

That is not a quest.
But if you want to ask about missed romance, I took an old chick to bed instead of the combat trainer.
For whatever reason you can't have both, which is a shame.
