you change it simply by moving the mouse in the direction you want to hold your weapon on so up, down, left or right
KCD2 simplified the combat a bit compared to KCD1 so ther are 2 less directions, lower left or lower right does not exist anymore, its just up, left, right and down, down is the stab now though

When you attack once from right, the weapon will move to left side on its own. So if you are chaining the attack from right - left, you don't have to move the mouse for the 2nd attack. You can simply press the LMB in time and do an attack from left after the 1st attack.
When you attack once from top, the weapon will again move to left side on its own. So if you are chaining where the attack needs to go top - left, you don't have to move the mouse for the 2nd attack.
But if you are chaining an attack from top - right, the weapon will move towards left after the first attack. So you have to move the mouse for 2nd attack and press LMB.
My advice is train with Tomcat as much as you want. Attack once from different direction to understand where you weapon ends up after that attack.
