There is a mod on Nexus that defaults them on closed visor, like it was in KCD1:

the pre order helmet is a great helmet so it does not have a movable visor in reality, the helmet only has a visor as far as the mechanic goes but thats for convenience reasons because having your screen permanentely be limited by the visor interface would be annoying. in reality the only way to open the visor would be to take off the helmet
edit: and in the first game there was no actual opening or closing your visor as far as the actual helmet models go, shure, you got the visual effect on the screen but in actuality nothing changed at your helmet model.
now in KCD2 the visors actually close or open physically on the model
