For your next playthrough you can try some mods that reduce sale prices by 50-75%. It will keep the game economy interesting for longer. Of course this implies that you don't steal anything as well.
But I'm not interested in prices. I don't steal stuff for sale, I steal their money directly :P
But this is actually very common in all RPGs - You're empty up until you reach some stage where you don't need money anymore,except some cheap stuff like repair kit or flagon of mead. Truth is all you need in KCD 2 is more or less 25k for new armour and horse once you enter Kuttenberg region. Of course, you can also steal that armour, in this case you need money for new horse only (if you want).
Doesn't Herring have best stats in the game? Or do you collect horses?

That super black horse in the pen in abandoned camp in east Appolonia (connected to Hermit quest). Man I wish I could steal that one for my assassin play thru.
It may not be the best horse, but I really really wish we could steal it.
Aside from that there's no real money sink.
Skill teachers can reach up to 5k per lesson.
