Can you steal your money back somehow from the trader you bought items ? I tried to rob a scribe after buying books but only found 20 groschen .

Pocket I found a 2 keys robbed them and looked at the chests near him but only found books no money

Haven't looked at the scribes myself, as I rarely visit them - only grab the books I care about and they are dead content afterwards. But with other traders, I have always found their chest of valuables somewhere in the building.

They often aren't in the same room with the NPC, but locked behind some door.

Most vendors have a hard/very hard to lockpick chest in a private area where they keep their wares and money. You can steal it if you find it, just make sure they don't catch you snooping around their private area or they will report you.

The travelling vendors you can pickpocket your money back.

You can also pickpocket your money back from most people that teach you skills (except some story characters where the game will not allow you to rob/attack them).
